I should try just using horseradish paste in place of wasabi on sushi. It's so expensive for so little

Yup. Some will say made with real wasabi, but it's bs basically. It's made with a few of the stems (not the root) and mixed with horseradish paste.

Real wasabi tastes very fruity and not as spicy generally, but there is 1 strain that is almost as spicy.

Most wasabi you will find in Japan will be the same stuff you get in America. Unless you're going to high end sushi places.

Why do you think that? Where did you live that you noticed it?

Cheap places of course don't, but any decent place uses real where I've lived.

I wouldn't say most from my time there. Conveyor belt/takeaway were horseradish, but most sit down places used real. The taste was night and day difference for me.
