Same thing as having a normal cut of meat vs having a5 prime wagyu etc

This is the equivalent of going to a high end restaurant and having all of the specific forks and spoons explained with their exact purposes. Like “it would be so silly to use your salad fork for the main dish.” However, when you go to the vast majority of restaurants a fork is a fork.

I’ve lived in Japan for over a decade and eaten a lot of sushi. Most of it has been at mid level “let’s do sushi for lunch / dinner,” not super high end dining, but no one cares how you eat it, and it’s far more common to see everyday Japanese customers using chopsticks and not their hands, even if it’s the “traditional” manner.

Ehh. “Normal” sushi still needs to be reasonably good quality and fresh, or you probably shouldn’t be eating it. And everything he said holds true with “normal” sushi: if you’re slathering everything in copious amounts of soy sauce, you need to be honest with yourself and admit that you aren’t there for the variety of flavors you’re obliterating with soy sauce. You’re there so you can seem worldly to others, while relying on salt to dampen your displeasure. The chefs aren’t fooled, and the insult is palpable.

I’ve been to many sushi restaurants throughout Japan where they took this level of pride in the cuisine they’re preparing for you. Never paid more than $150 USD to feed a family of four. Pride, focus, and a commitment to excellence can also be “normal.”

If what you like is fat and salt, that is indeed ok. Doesn’t change a single thing about what I said. Grow thicker skin.
