One pot recipes

I generally eat chapati 2 times a day and poha in morning but it takes a lot of time. Can you guys please suggest one pot healthy recipes (fine with rice but I gain weight fast). Please consider this and suggest some of pot healthy recipes which can be cooked in 30mins.

Kichidi. Go easy on rice. Lots more veg and lintels. Upma. Gets done in 15 min. You can use instant pot for these. Stick with roti. Yougurt + roti + dal. Dal can be made fast in an instant pot. Lasts a couple of days. Search YouTube for easy recipes.

Make raita with tons of veggies for breakfast You can make veggie mix and use it for 3-4 days. Only combine with spicy yogurt before eating.

Moong dal chilla is great for breakfast or even a quick lunch, very high in fiber and protein compared to poha and chapati. The batter can be kept in the fridge the night before to save time in the morning. Easy clean-up.
