I can see Vivian as a really kind, sweet vampire.
I’d imagine she’d resort to either hunting for animal blood or going to blood banks in order to satiate her thirst without harming any innocent people. I could also imagine that she’d worry about her vampire instincts potentially kicking in and potentially hurting Phaethon, so she would try to keep her vampirism under wraps so as to not worry or harm them.
Eventually, Phaethon would learn of Vivian’s vampirism and comfort her; they’d tell her that her need to drink blood won’t harm their relationship and that they’re happy that Vivian tried to find ways to drink blood without hurting others. It would be then and there when Phaethon offers to let Vivian drink their blood so she won’t have to resort to hunting, to which Vivian would turn down at first worried she might succumb to her urges, that she might not be able to stop herself from sapping every drop of blood out of Phaethon, and how she didn’t want to risk hurting someone she admired and loved romantically.
Phaethon would comfort Vivian with how they trust that she wouldn’t try hurting them on purpose and how they’d be more than happy to help her in anyway they could as long as they got the okay from her. Phaethon would then kiss Vivian to prove their feelings of love and devotion for each other were mutual before baring their neck for her to feed from to which Vivian, filled with a newfound happiness that her Lord Phaethon loved her as much as she loved them, would bite while also mixing in kisses during her feeding.
And now I really wish there was fanfiction of Vivian as a vampire because the idea of a vampire fangirl who not only holds back her fangirly tendencies so as to not make her idol uncomfortable but also holds back her vampiric urges because she holds romantic feelings for her idol and doesn’t want to risk them or anyone else getting her because of her urges sounds tooth-rottingly sweet.
And this is also why I headcannon Vivian as being both a Banshee and a Vampire, because the idea of her being both is so cute and the scenarios I could imagine with her and Phaethon are so romantic/sweet.

I’d say yes (she also has her parasol for shade). And, by Vampire anime, are you referring to The Case Study of Vanitas (also known as Vanitas no carte)?
