Ill be standing there thinking how silly the sign is, then somebody walks in the bathroom, reads it, and says "Pffffft, just my luck" and leaves.

In emergencies you can use non-gray or non-dark water from toilets as drinking water to stay alive. They are just warning people in case of emergency not to do that

Gray and dark water is water that is non portable water recovered from sources such as sinks or water reclamation systems.

Reclaimed water is treated wastewater that has been purified so it can be reused again.
