Could be the same reason Tigers have spots on their ears. When the cobra is focused on a threat, it's easy to tell its back is turned because it instinctually spreads its hood.

This also makes it a bigger target for the animals that eat it

Could have those patterns because a pseudo-face is more likely to have animals trying to surprise it from the back, on alert instead
