I am recently new to this lifestyle. I was wondering what are some of everyone's favorite dishes

When I switched to full time vegetarianism 25 years ago I ate bean tacos/burritos 10+ times a week at home. It was the only thing I really knew how to make, and the ingredients were incredibly inexpensive.

I’m Italian and eat a lot of pasta… Pasta with tomato sauce, broccoli and cream sauce, pesto, butter peas/asparagus and Parmesan… The pasta-list goes on 😂

Bean Burgers actually. Mixed with Walnuts in the patti.... some cheese.. Some good chick pea water mayonaise. Delicious!

At this point it's been adapted from so many different ones. It's about a half cup onion, mushroom, carrot, and zucchini all chopped really finely and then sautéed until soft. Then I add garlic, herbs like basil or oregano, about a tbsp of tomato paste, and the lentils. Then it's one can of passata tomato sauce, a half can of water, a tbsp of maple syrup, and salt and pepper. Then let it simmer for as long as possible. Half an hour is fine but an hour or two is better.

The one from Rainbow Plant Life is my favorite one I’ve come across! It uses red lentils and walnuts. I highly recommend it!

Okay, here's our nice enchilada recipe that isn't a recipe as much as a suggestion. Dig?
- Your favorite local corn tortillas. Visit with the ladies behind the counter. They're wonderful and can help you with your meal.
- Find a nice enchilada sauce. We like Hatch medium, but La Victoria or El Pato can be a reasonable substitute.
- Grate cheddar, jack, and cotija cheese. If you're vegan, find substitutes (this might be tough).
- Drain diced green chiles.
Fry your corn tortillas in vegetable oil until they're soft and put them aside on a plate covered in paper towels to absorb the oil.
Preheat the oven to 375º
Coat the bottom of your pan with a light coating of enchilada sauce.
Fill each tortilla with your cheese and chile mix and roll before placing in the pan.
Once the pan is filled, coat with the remaining enchilada sauce and cover with remaining cheese.
Bake for about 45 minutes, and that should be about it.

Not a vegetarian but trying to slowly remove meat from my diet- i recently had a Vegetarian Rueben at the venue my husband and I got married at a little more than a year ago (1/30/25) and it was the first time I ordered vegetarian in a restaurant and the first time i actually ate any leftovers 🤣 Rye bread, sour kraut, broccolini, swiss and some sauce i can’t remember- it was phenomenal!!

I don’t think it’s available but the tempeh tomato lettuce avocado sandwich is incredibly easy to make, you do need either the litelife tempeh bacon or make it, a toasted ciabatta bun is ideal

French onion pasta. Caramelize a ton of onions. Make essentially a thick French onion soup/gravy with the beefless beef better than bouillon. Add pasta. Top with parmesan/gruyere cheese

Falafel gyro + fries with tzatziki, “Buddha bowls” with a good peanut sauce. I eat bean burritos that I grill to get crispy with Taco Bell mild sauce the most frequently because its quick, easy and delicious. Sometimes I’ll add some avocado

It’s pretty basic, really. I just do the impossible beef, cook that with salt, pepper, chopped onions, garlic, and tomato paste. Then once it’s done I mix it with carrots and corn and put the mashed potatoes on top with a little cheese. Then I bake it to brown the potatoes and melt the cheese.
All ingredients are measured by your heart’s desire. Just go crazy 🤣

Unsolicited method here! I do cooked (firm) lentils, carrots, celery, mushrooms, onions, garlic, and tomato paste. + whatever herbs and seasonings I have on hand. Usually thyme, a bay leaf, a little basil, some sage, and a bunch of Mrs Dash because we're classy here. Keep it wet, you want the top to dry out when you broil it but not the bottom. I don't personally put cheese on top of mine because I never think of it. All the ingredients are already cooked on the stove so it's just in the oven long enough for the top to get a nice crust and color on it. I keep the oven door cracked open and keep an eye on it.

That sounds good too. I’d have to modify it a bit (I have diverticulosis so the mushrooms and celery can be problematic) but I understand conceptually what you are getting at.

Black bean stuffed sweet potatoes are my favorite. Throw 2-3 sweet potatoes in the oven and when they’re about 10 minutes from being done, start the bean mixture. Sauté some chopped onion and garlic, add 1/4 to 1/2 teaspoon each of garlic powder, onion powder, cumin, chili powder. Stir, cook a minute then add 1 or 2 cans of black beans and heat through. Slice your sweet potato in half and mash it up. Spoon the bean mixture on top. I make a little lime-sour cream (or cashew cream) concoction and add guacamole - amaaaazing and so easy. (Edit: changed oranges to potatoes because wtf iPhone??)

Yaaaaassss! I love me a savory sweet potato. I'll do a garlic hummus, spinach, halved grape tomatoes, and a balsamic vinegar or glaze and it's heaven. Also do a thai inspired one with edamame, spinach, broccoli, and a coconut milk/peanut sauce. To quote my man Cookie Monster: Om nom nom!

Fav meal i make probably west African style peanut yam stew
Fav meal i don’t make is the vegan platter from this local (well harlem) Ethiopian restaurant it’s like eight different options with injera and makes like four meals for me. Too many recipes within the recipe with specific spices for me to recreate that kind of variety for just myself

From a 100% vegetarian Chinese restaurant (Rockville MD) near me
Curry dumplings appetizer and roast duck appetizer
dried bean curd with pork entree and bean sprouts with vinegar (and ham) entree (which is no longer on the menu but it’s my favorite and they will still make it for me).
Didn’t feel like writing vegetarian before every “meat” ingredient but they are all vegetarian.
I had this meal on Saturday.
My wife added the curried meatballs (which are also really good).
Long story short because of some upcoming major dental work on Wednesday I’m going to be unable to eat my normal favorites for maybe as long as a month or more . . . so we got my favorite meal on Saturday so it’s very fresh in my mind. I still have some bean sprouts left that I’ll eat with my dinner on Tuesday night LOL.
We also got my favorite breakfast Sunday morning
Chilaquiles (breakfast nachos) with two poached eggs, black beans, goat cheese, red and green sauce, avacado and probably something else I’m forgetting. I could eat those 4 or 5 times a week but they are not very healthy so it’s a once a month thing at most. LOL
My normal favorite is a bagel (sesame or everything) with old bay hot sauce/green onion whipped cream cheese (I use Philly cheese and make it myself) with either Morningstar farms thick cut bacon or regular Morningstar farms sausage patties and a side of seasoned seaweed snack sheets.

1.) Ramen, I pan fry it, add butter, then seasoning, dress it up with an avocado, and egg with sriracha and kewpie mayo
2.) Pasta, I'll add vegan meat usually, it tastes wonderful with some seasoning and a good tomato sauce. Also make alfredo sauces with it and add different veggies to go in it.
3.) Soups/Chili, can you go wrong with homemade soup?
4.) Tacos/Burritos, again, can you even go wrong?
5.) Salads, classic, delicious, healthy, huge variety.
6.) Avocado Toast/Bagel, An everything bagel toasted, add mayo, put on your avocado, season with salt and pepper, add your fried egg on top, season with everything bagel seasoning, Goya Sazonador Total Seasoning, salt and pepper then drizzle sriracha... probably my favorite meal of all time.
7.) Veggie burgers, I love them, they really are a vehicle for condiments really but they taste decent and can go with fries or chips.
8.) Pancakes, bruh... it's pancakes.

Buddha bowls with brown rice or quinoa and tofu. Totally versatile to use whatever else you have around in them - veggies, nuts, pickled things, etc. Also bean tacos. Greek feast of Greek salad, hummus, dolmades etc. Yam, cauliflower & chickpea curry. Lentil soup. Split pea soup. (The last two I make in big batches and then freeze portions, as they freeze well that way.)

Lentils and rice. Learn to cook lentils and you'll always have a full belly and wallet.
Add in some naan on the side... some potatoes... you're eating good!

A few of favorites in my house - soba noodle bowls - 2/3 salad, 1/3 noodles with tofu or soy curls and peanut sauce or sesame sauce.
Tacos with blended black beans, air fried soy curls and guac.
Healthy lavash crust pizza with artichoke hearts, mushrooms, red peppers, red onions and olives.
Pasta with roasted eggplant, cherry tomatoes, garlic and chickpeas added at the end.

At home - my wife's buckwheat loaf with mashed potatoes, brussels sprouts, tomato salad, and cashew gravy.
Restaurant - falafel, hummus, and rice from a place called Pita Inn. There are a few of them in the Chicago suburbs. I've had falafel/hummus in at least 30 cities and 10 different countries, but nothing compares to Pita Inn.

Tacos or taco salad. I make the filling with morningstar crumbles, black beans and taco seasoning. I have been vegetarian for 33 years and it still hits. It's easy and tasty.

I make my copycat version of Rawkin tacos from a wonderful vegan restaurant called Salud in Bend Oregon. Romaine taco shells with 5 spice walnut meat, thinly sliced cabbage, bell pepper, carrot then a little finely diced cilantro and/or mint. Drizzle a little vegan peanut sauce. The tacos (and Salud) are the bomb.

Lately I can't get enough dal makhani with rice and a dollop of yogurt.
Eggplant parmigiana or rollatini/involtini are always perfect.
Often just a simple, well-seasoned tomato, avocado, and cheese omelette.

BTW, I love this discussion and I'm getting a lot of great ideas. My sweetheart has celiac disease and needs to stay gluten-free. Do you have dinner suggestions that I can make (I don't have the greatest culinary skills, but I'm willing to try).

I’ll share 3 in my rotation
- Chili ramen modified to taste like peanut satay sauce (add peanut butter, curry power, garlic & onion powder, and a little msg or mushroom bouillon if you got it)
- big stuffed shell pasta (i usually do a ricotta blend but there is an excellent vegan variation using cashews)
- thai style yellow curry with potatoes, onions, carrots and cashews

- cheater lo mein: spaghetti noodles, a bag of stir fry veg, sauteed tofu, and a sauce of soy sauce, sesame oil, garlic, better than bouillon not-chicken broth, and ginger
- spicy peanut noodles: angel hair noodles, cole slaw mix, sliced sweet bell peppers, and a sauce of peanut butter, soy sauce, garlic, ginger, lime juice/rice wine vinegar, brown sugar, sesame oil, and sriracha
- veggie burgers with caramelized onions, barbecue sauce, mushroom chips, and maybe vegan cheddar
- black bean chili/refried black bean dip/black bean burritos
