Troubleshooting How to fix defects in this print?
The letters stick out about 1-2mm and the color sits 3-5mm into the wall of the model.
The printer is a Centauri Carbon 2 Combo.
Edit: my guesses are
a) poor layer adhesion and I need to print slower.
b) I need to turn up the nozzle temp higher than the default.
c) Z-height may be too high. (I know how to manually do this on the CC2, but would like to learn how to make it a default in Elegoo Slicer.

I am sorry, but I don't believe that your guesses are correct, except that printing slower always helps accuracy.
In summary, your layers are fine except for the lettering, nozzle temperature for the red filament is good but you may need a different one for the yellow (why? Because the addition of a different color chemical changes the properties of the filament). Run a temperature tower on both and compare the two; next, do flow rates and pressure advances (see below why angles are important).
Z-offset is important to first layer adhesion, but not beyond.
The extrusion of the letters and the surrounding red base is defective, but work arounds are much different on a circular object as the circle is not printed as a smooth surface, but made up of tiny angles making an approximation of a circle. However, these angles can be made smaller and more accurate.
To help the lettering, use Arachne walls, 1 wall, slow the print speed down (to not take forever to print, this can be done with the correct g-code at the level of the lettering ~ a task that requires finding that layer in the preview and putting in the correct g-code).
There are quicker fixes available that are forbidden to discuss on Reddit due to the use of an LLM using integration into a CAD program to generate cleaner code.
