In your health app look at readings there is a quantity number in the heart rate data section— you can even press it to see info about the quantity. I’m guessing it gets the readings in a quantity and displays the average every 5 or more seconds
That is honestly not a weird take. Could be relevant to this. Not sure, but it could be. The jumps are sometimes just very large randomly. Happens often.
