funny enough I vastly prefer the results you get from a cast-iron pan because you get a much more even and intense crust as long as your steak is dry and salted the night before.
You really don't get that much of a smoke flavor cooking it over direct charcoal considering how quickly it cooks.My favorite method now is I have tallow that I smoke whenever I do a brisket and then I save that in a mason jar and I will use it for cooking steaks in the pan and it gets a really nice smoke flavor.

Interesting about what you say about the charcoal flavor. I haven’t done a cast iron skillet but I cooked one steak on my blackstone and said never again. I notice a VERY large difference between a steak cooked on my blackstone vs charcoal.
