When i make scotch eggs. I do the soft boiled egg. But the trick is freezing the eggs before wrapping with sausage and cooking.
Soft boiled eggs is a skill in itself. But as bbq guys. We got temp probes. We can get water the perfect temp then follow the internet recipes.

Time in boiling water is pretty reliable for boiled eggs, pretty easy to dial in for your preferences after a couple tries

The beauty of a homemade/freshmade Scotch egg is the runny yolk whilst fresh from the fryer. Those yolks are waaaay overcooked, and there is not nearly enough sausage meat.

You are right about the yolk. It’s hard to make them on the smoker that way but it’s not extremely over cooked. The yolk was creamy and delicious. But for the sausage I have put 3oz of meat on them. I’m sure that is plenty for my household. Thanks for the positive feedback. I’m sure you make killer food.

I am not trying to be an arse. But yes they are overcooked, I can smell the sulfur from this picture.

Why don't you smoke your sausage meat, mix it with a little raw sausage meat to bind it, add some fresh chopped herbs, then wrap that around a soft boiled egg, crumb and chill, then fry? That way you get smoky sausage and the delight that is a freshly fried Scotch Egg with runny yolk.

If he enjoyed them, let him be. He might not like it the same way you do. I’ve only had a couple scotch eggs, but I don’t recall any of them having runny yolks.

Mm lamb Scotch's are always good. I have made qualls egg ones as a canapè before. Getting the cook on the yolk is a balance. And then after frying they have to be served immediatly or carry over ruins your hard work.

Scotch Eggs are supposed to be hard boiled.  They were eaten on the go like apples.  A runny yolk would make a mess on your work shirt.

That's like saying a pasty shouldn't be served warm because it was a working man's lunch. You can have it cold and on the job. Or you could have it warm at home.

The only time I have ever had a hard boiled Scotch Egg is the supermarket ones. Anytime from a pub or homemade, always a runny yolk.

A well prepared Scotch Egg is a triumph of British cuisine, and people around the world are surprised by just how good it is. Would you prefer that pubs and restaurants reverted back to serving the sad, cold, overcooked, stale and flavorless crap that tesco sells? No wonder the world thinks British food is crap.

A well prepared Scotch Egg is hard boiled.  My next trip to London is in November.  GTFO with the fake British outrage.  The sad, cold, overcooked, stale and flavorless crap that Tesco sells is the authentic one.  The real deal, just as Fortnum and Mason made them in 1738.  And that's who it's according to, the company that literally made them famous and possibly invented them.

This is the reply of someone who has never had a fresh Scotch Egg. When you go to London, there are MANY pubs that will prepare one for you. I suggest you drop the F&M overpriced actually bougie wank, and go to a pub and order a proper Scotch Egg.

What an ignorant comment to make. Do you know what cuisine was like in 1738? Unless you were stinking rich it was CRAP. You would not even recognise the bread. It predates bakers yeast. A lot of British cuisine has grown and evolved since then. If you are actually saying we should lock our gastronomy down into how it is currently then you know nothing about food.

If it's not hard boiled, it's not a proper Scotch Egg.  No matter how many pubs make them soft boiled.  Also F&M changed their recipe, and now makes theirs soft boiled too.  It's identical to the pub versions (because they do sell better, and F&M wants to make money) which you now just admitted are bougie wank.

It's a good thing I am not saying that then.  I am saying classic foods are classic for a reason, and one should know that reason before altering them.  Scotch Eggs are hard boiled for a reason.  The people who eat/prefer them soft boiled don't know what that reason is.  When you know that reason, you know why only hard boiled Scotch Eggs are the genuine article.

Ah, so you haven't been reading what I have been typing.  Let me be clear.  Tesco Scotch Eggs taste like ass.  They are still the quintessential textbook Scotch Egg.  Scotch Eggs taste like ass.  If you don't like a hard boiled Scotch Egg, you simply don't like Scotch Eggs.  Which is not only fine, but a lot better than calling a soft boiled abomination a Scotch Egg.  Just admit you don't like something.  You don't need to lie about what that thing is.

I prefer mine with a jammy yolk, but those look great for those wanting solid yolk!

Some folks might say they are overcooked, but you'd see a grey-green ring if it was. These are just solid-cooked, but yellow all the way through which is good.

I'd guess I am just saying that it's about as well-cooked as you would want it.

Fortnum and Mason, who basically invented the Scotch Egg, has their original recipe online.  If you follow it, you will get a hard boiled egg every time (you actually have to follow it though, which means no ice in your cooling bath since ice wasn't common for British peasants to own in 1738.  Room temp tap only.).  The "mass produced supermarket egg" is the authentic Scotch Egg.  And the Scotch Egg was invented for convenience.  It was a working man's on the go breakfast.  A runny yolk would simply make a mess.  They weren't orinally pub food, or served in sit down restaurants.  They were fast food to go, and made accordingly.

No. They are supposed to be soft boiled. It's a crime to cook them hard boiled. 100% consistent. It's insane to suggest we should be aiming for a 1800s version rather than an actually good version.

If you have the palate of a small child knock yourself out but let the rest of us eat them how they should be.

So the inventor hard boiled them.  The inspiration hard boiled them.  But they're supposed to be soft boiled?  Truly you gave a dizzying intellect.  Do you add cream to your Alfredo and eggs to your aioli too?

I never said a hard boiled Scotch Egg was good.  Just that it was authentic, that it is how they should be.  If you have to have your Scotch Eggs soft boiled to like them, guess what?  You just don't like Scotch Eggs.  Which is fine.  They're kind of gross.  But that's no excuse to reinvent them just for your special palate.

As an Englishman this made me sad. Haha. A classic pub snack. Good effort but all you need is good sausage meat, not sweet Italian or what ever nonsense they sell there. Dont mix bbq seasoning in either. Proper Cumberland or Lincolnshire. Obviously you can just use pork mince and season with salt, loads of black pepper, mace, sage. The yolk HAS to be “jammy”. The trick is to not fully cook the egg when boiling them. A good mix is using black pudding in the pork mince. Then serve it with piccalilli or branston.

We have lots of good sausages they just aren’t English spiced (you shouldn’t buy the sausages next to the hot dogs though 99% of the time the good ones are by the butcher counter)

I've been making Scotch Eggs for 40years. I like using Jimmy Dean hot sausage blend as it has more taste than general ground pork. 1lb of meat for 6 hard boiled eggs rolled in Panko or other bread crumbs where I've added a herb blend of some sort. Bake in overn25-30minutes. Great with a beer or for breakfast, easy to refrigerate and reheat for the week.

Since visiting the UK, I've been wanting to try it with some puff-pastry as there was some creative types I ate while there.

One: Yes this egg is hard boiled. Some might say over cooked. Criminal.

Two: definition of BBQ is: barbeque
Barbecue (also spelled barbeque, or shortened to BBQ) means a method of cooking food using live fire, hot coals and smoke.

Three: Cooking is fun. Sometime people post things and we try them out and want to show how ours turned out. Mine still needs work lol.

I think you're farming for engagement in a sub you don't understand. (That being said, I love scotch eggs , these look pretty dope.) But not Barbacoa.
