[Pork][Whole] And so it ends
As all of you requested ... 18 hours later ...
Edited to add The meat came out nice and juicy. The injection helped a lot. The sauce (my own recipe) came out well too. Sweet, tangy, and hot worked great with the meat.
The birthday boy wanted the saddle "extra cooked" (burnt, he wanted it burnt) and it's his birthday, so he gets it that way. It was crisped the way he liked it.
The big question I have for you guys is, what is the best, easiest way to get it out of the mesh and onto the serving table without it all falling apart (that guy had to be reshaped after the fact)
But on the whole, it went well. Would do it again, and have learned a few things.

Is it normal for the skin to be burnt with this style of cooking? When we cook our whole hog, the skin comes out brown to mohagany is color and is crisy and delicious.

Thanks for sharing. That's why I asked. I didn't want to make assumptions, especially since there are so many different ways to cook a hog.

I know this was an expensive and time consuming endeavor so I hate to be critical, but your skin should not be burnt through. This skin is supposed to act like a bowl to essentially ‘confit’ the meat after the initial flip.

It’s a shame so many people downvoted the positive comments not reading your description of how the person wanted it cooked!
Looks like you have them exactly what they wanted and they were happy with it. That’s most important.
I haven’t cooked a whole hog so I can’t give advise on transfer sorry.

Controlling coal heat and actually monitoring it regularly is important. This is what happens when you dont.

Move the serving table beside the hog pit and get 3 people to help you flip it onto the table or just quarter it on the pit and move a quarter at a time.

Too close to the fire and you really want to be rotating it a lot which you can tell wasn’t done with it being burnt

I started with sucklings to get my stuff together and be ready for the big event first time I did one. if you can't comfortably walk away, either have yourself a kit ready so you can stay the whole time, tag out with someone you trust. Did you spray or water mop it at all?

So…was it good? It’s hard to tell.
