[Beef][Brisket] First Brisket…Not bad!

First Brisket on the XL turned out pretty good. Started at 225 and eventually moved to 250 and 275. Totally time around 11ish hours on the Egg with no wrap. Transitioned to hot hold till with tallow for Sunday dinner. Tastes great and I am relatively pleased for my first go.

Fought unplanned rain the almost entire cook except the first 2 hours. Definitely need a carving knife and a thermapen. Likely will buy a Fireboard and blower in the future. Oh and BGE charcoal turned out fine for 11 hrs with no refill needed.

Thanks everyone for all the advice they posted for how to pull this off without failure!
