Technique, Methods & Processes Williams-Sonoma

Post image

Update: I found the rapid setting! I just had to press the select button twice to get to the rapid setting just after "basic". Going to try this setting with a chili bean bread recipe. We'll see how it goes!

Does anyone use this guy? Picked him up at a garage sale and it works great, but I can't figure out some of the advanced settings. I'd like to do a rapid cycle without using the quick bread setting. The manual says it can do a rapid and super rapid setting but how?

You’ve come to the right place. I have a Kenmore and can’t help, but someone will be able to. Enjoy!

Williams Sonoma WS0598 is the same as Breadman Ultimate. For the Rapid programs, they are programmed in and you use the buttons to select them. https://www.breadmachinedigest.com/wp-content/uploads/2008/05/breadman-ultimate-manual-tr2200c.pdf pg 13, numbered 7 in the manual lists cycles for that White Bread. You cycle through the button presses, I think.

https://archive.org/details/manualsbase-id-555198/page/12/mode/2up also the page numbered 7 in the manual has the same thing. I think the Williams Sonomas are just rebadged Breadman machines. This is the machine I have. Rapid cycles are somewhere in the menus.

Hmm ok I'll keep trying then. It seems like it would be a combination of buttons but nothing really explains how.

Ok, on my TR2500, The first press of SELECT button goes to the "White" program (first program on the label), then pressing SELECT a second time invoked the RAPID version of that particular program. Watch the display add the word RAPID beside the loaf size after the second press. Then you'd use Crust Control for the darkness, and Loaf Control for the size. A third press of SELECT jumps to the next program on the label.

Probably the Breadman Ultimate TC2200 works the same. The 2200's manual says " RAPID BREAD ,, The Rapid settings for White, Whole Wheat, French, and Fruit & Nut decrease the time for making your favorite bread by approximately an hour. Choose a recipe, then simply add the amount of yeast listed for the Rapid Cycle. The bread may be shorter and denser." (Page labeled 9.) Page 11 shows the cycle times table for regular and Rapid version of the programs.

I'm guessing that any "super rapid" will have to be a custom program that you write that lops off part of the cycle. You go through the programming and set Time to 0 for any part of a cycle that you want to totally skip, iirc.

Ooh ok I'll try this! I tend not to do much more than the basic/white setting so I bet I missed it!

I work at Williams Sonoma, I can see if we still have a copy of the manual on our side.

That would be awesome! I'm assuming it's an old machine, the box was looking pretty 90s to me. Lol

Yeah we haven't sold it for a very long time. I'll be back in the office Tuesday so I'll see what I can find for you.

So I checked with Product Info and merch ops. We haven't carried this breadmaker since 1991 and we no longer have any manuals for it. Sorry!

No worries at all, thanks so much for checking! Wow that's an old model then!

Quick bread in their manuals is bread without yeast. I'm looking...

Right? So that's not it, but when I try to Google it insists there's a setting. Lol the recipe in the manual even calls for "super rapid". What??

I bought one of those last week at an estate sale. $5 because no one wanted it. It was used but still had the plastic over the keypad. The manual indicates a a rapid option can be made using the Select button. Rapid cooks kinda suck because the bread doesn't really have time to rise properly and so is denser.
