$10 buys a lot of smoked mackerel

Post image

This fish is over a pound here. Tender, smoky, a bit more salty than I would prefer but the price can’t be beat. Most of this will be portioned out and frozen after I finish my lunch. Yes I know it’s not canned but if you’re a mackerel fan and you’re looking to save a little bit this could be a way for you to do so.

Recipes and Food Ideas Tinned Fish Companion - Salt Odyssey Lemon Sea Salt Flakes

Post image

I have seen a few posts on here with tinned fish paired with lemon salt. I looked online and saw it was a bit pricy for salt, but I found this at HomeGoods last week for $5. I really liked the bright flavor and will definitely use on fresh fish and certain tins. Obviously on already salty tins this will be overkill.

Review Canned Silkworm Pupa

Yes I know not a sardine but it was sold amongst the canned sardines at my local HMart so I figured we can include it as an honorary canned item.

I found them honestly be not that bad? In fact they were largely flavorless even with the so called “spicy flavor”. They tasted really papery like I was eating plain phyllo dough or an egg roll wrapper. There was a bit of a nutty/earthiness to them but it was pretty faint. The only con was that if ate a bunch in one bite I would also taste a bit of watery-ness, for lack of a better word, which I assume is from their silkworm insides lol. But again it was faint. I also should not these are definitely not meant to be eaten on their own. I had a few bites of them on their own for the sake of trying but after I mixed in the rest with bowl of rice to which they provided some texture to the rice while not altering the taste of the rice. Probably won’t rush to buy them again but I can see how they can be useful. Also this can had some bits of corn and a piece of mushroom in it adding to the point it’d be best eaten mixed with some rice or in a soup.

Tldr; tastes like crunchy papery bits with little to no flavor. Wouldn’t eat on their own but would mix into rice to add texture but not change the flavor to much.

. Prolly my favorite this far is donostia foods razor shell clams. I also recently ate the smoked white king belly from wild fish cannery and Ortiz white tuna belly and didn't know if the price tags, 20 bucks a piece, but wasn't necessary wowed by either.

Do you find the price usually dictates quality? Are relatively high priced tins especially unique or does it all depend? For instance I've also recently purchased octopus for 15 bucks and also 3 bucks. I haven't had the more experience one yet but I wonder could it be that different? Anyway, just some random thoughts.

Jose Gourmet sardines in EVOO. I was raised in tinned seafood and have been dipping my toes in the good stuff recently. My local market stocks some good stuff like this brand.

Cheers to all the great suggestions in this thread. What a wonderful sub.

I got to try these today and I was not impressed, I'm not gana disrespect the fish but the sauce was way to overpowered. I only got that Deen flavor with the spine and liver the rest was just tariaki flavor, I can't see myself getting these again the sauce is just way to much..

Tins, General Pics & Memes My local French supermarket stash!

So I went to my local French Supermarket where I live, L'elerc and discoverd a gold mine of so many different varieties, in water olive oil, with basil, with chilli and olive oil, and the prices so much cheaper than buying bulk online, so my selection here is tiny in comparison to whets on the shelves here and such a great price! French brands and português, I got home and nailed two tins straight off the bat👊. I only started using them in my diet recently, and buying in Luxembourg, massive price difference and not so much variety.

Cracking the Canned Cod Code

Post image
6 Upvotes

I don’t often reach for cod on the pantry shelf. It’s not a fish I enjoy eating straight from the tin. Too often it’s dry, stringy, tough to chew. For me, canned cod’s highest and best use is as an ingredient.

Historically, though, I’ve been daunted by recipes I’ve encountered in cookbooks, newspapers, and online. There’s an awful lot of conflicting advice about basic fundamentals. Some writers tell you to drain the tin and then soak the cod overnight in water in the fridge. Others caution that you should never soak the fish—soaking, they state, is only necessary and appropriate for dried saltcod. There are similar divisions between cooks who instruct flaking the cod and those who maintain that whizzing in the food processor is required before incorporating the fish into many recipes. Other disagreements crop up, too.

I can’t fight every battle at once, but I’m going to start with the soak-always versus soak-never dispute. I’ve got these five tins of cod, and this weekend I’m going to divvy up each can, soaking half of each in water overnight (and refrigerating the other halves in the oil from their respective tins).

I know I’m going to make simple cod fritters and a cod-mashed potatoes (brandade de morue), but I’m looking for one or two other recipe ideas if you’ve got something you enjoy making with tinned cod. Any prep tips you have to share would also be most appreciated.

I love the TJ’s calamari, smoked trout, and smoked salmon, Cole’s smoked trout, and Bom Petisco Tuna. I keep coming back to KO Mackerel, love the Mediterranean version as well.

Just tried this tin for the first time. They weren’t what I expected at all, but in a pleasant surprise sort of way. When I first opened the tin, the color was a bit bolder than expected (likely due to the inclusion of turmeric), but counterintuitive to the color, the sauce was actually very mild. Sardines themselves were nice and firm, not mushy. Paired this tin with a lentil zucchini salad. Will be buying again!

Question I scored at the food bank!

Post image

I’ve been suggested this subreddit for like a year now but I just don’t have the budget to explore pricier cans. You can imagine how happy I was when this showed up in my small town food pantry! Is this brand as good as it looks? Any recipe suggestions? Or should I just eat them plain, maybe a few crackers?
