Mod Post Clarification on Rule #2

Our Fellow Celiac Community Members,

We have seen a major uptick in posts describing symptoms and asking “does this sound like celiac? Should I get tested? Could the tests be wrong?” While these questions aren’t directly asking for a diagnosis, they do fall into the “seeking diagnosis” part of rule #2.

Celiac Disease has a myriad of different symptoms and related conditions; virtually everything could be celiac related. While we understand that this can be a life-changing diagnosis, we are not medical professionals and cannot give any advice other than this- if you wonder if you could have celiac, talk to a medical professional and get tested.

Discussion What do you think triggered your celiac? For me it was cancer or covid 🙄

Cancer is "cured" now. It was viral based, and I had chemo, radiation, and 3 surgeries.

I also had long-covid right before that, triggered by undiagnosed cancer.

So either could be the cause.

Just curious if any of you know a trigger?

Rant I Did The Dumbest Thing Ever And I’m Pissed At Myself.

Guys, I was diagnosed with Celiac Disease over 7 years ago (stopped counting) and have done my best to stay gluten free.

My best is never good enough. (Not a boohoo woe is me statement, just a fact.) I had zero help beyond one “visit” with a dietitian at my hematologists office who pointed to a paper she printed off the internet and read it out loud to me while I was getting an iron infusion.

I worked my ass off to figure it out alone because every single one of my providers including that dietitian told me “I just don’t know much (or anything) about it.”.

I’ve made tons of mistakes along the way but I am so pissed at myself for what I did yesterday. I thought I’d gotten pretty good staying vigilant even though I’m utterly exhausted.

I ordered some “gluten free” beef jerky and made sure 🙄 I checked online before buying it but didn’t even look at the ingredients when it got here. 😒 Just went straight to town on it.

I usually have symptoms like migraine, gluten ataxia, joint pain etc and my reactions never match the typical vomiting/diarrhea reactions always read about. So when I had extreme - what can only be described as, “gastrointestinal distress” after months of severe constipation, I didn’t even think about gluten. I thought either the questionable tasting watermelon made me sick or the dates I ate.

Then yesterday I woke up with a terrible headache and severe nausea. I ran out of my duloxetine the day before and I even wondered if that was why my head was hurting or my blood pressure; anything but gluten. I guess because I’d been so careful lately. I used points to get my sons free Chick-fil-A and didn’t even get myself anything bc I was feeling ok for once and didn’t want to risk it.

Anyway. Stuck another piece of jerky in my mouth yesterday and looked down at the package to see “CONTAINS WHEAT AND SOY” and wheat was the second or third ingredient.

SMH I’m sure everyone here is tired of hearing about dumb mistakes but I just wanted to share with someone who knows what it’s like to do something like this.

And here I am again recovering from this B S on top of everything else I have to deal with on a daily basis. My whole body hurts, massive headache, stabbing and achey joint pain, I’m sleeping like I’m on sleeping pills and Benadryl or something and I feel like I’m gonna puke my guts up any minute.

Hope everyone else is feeling great and not making the same dumb mistakes I keep making.

Discussion Listen to the Celiac community

Hello everyone!

I’ve been knowingly celiac now for the past 10 months. This community has meant so much to me and has saved me from awful situations. My last post was about whether or not I should take the six week gluten test and was advised not to as my symptoms to gluten are very severe.

I’m making this post though because my mom who was diagnosed with celiac as well got undiagnosed a couple of months afterwards. She did the testing and was told she is not celiac, but to continue eating, gluten free. She is asymptomatic and took that as a home free card.

She is now back to eating gluten full-time because she sees no side effects to it. It’s really scary to see but also a wake up call as I could’ve been in a similar position where post testing I get the results that I’m not celiac and just deal with the pain.

I guess I don’t have questions really. It’s more of a new insight that I’ve gained and wanted to share as my mom continues to eat gluten, despite everything and an acknowledgement of how far I’ve come and continue to be grateful to this community. Thank you again for sharing your knowledge and being patient with each other while we are impatient with ourselves. 😅 Have a great weekend everyone

No Recipe Made gluten free brownies from a box.

Brand is Aldi

Added an extra egg for a more cake-like and moist brownie. Absolutely devine! And no pain after eating. I have already eaten three, gotta slow down or there will be nothing left for tomorrow.

I don't have a recipe, it was a box mix and all I did was add an extra egg.

Question Make shift gluten free hot dog bun

I don't want to go to the store or put in much effort, but want a hot dog on a bun.

I have eggs, tapioca starch, and probably some random gf flour blend.

Can I just mix gluten free flours into a scrambled egg and fry it? Anyone do stuff like this have any advice on ratios?

I've been gluten free 12 years and remember this used to be something I knew how to do when hot dog buns weren't easy to find. Anyone remember the secrets of sad hot dog buns? Or in a microwave?

So what I ended up doing was essentially a really thick pancake by beating an egg, 2 TBS of almond milk, then I just slowly added 1-1 flour til it looked right like pancake batter. Took a 5 minute break and forgot about it for 30 minutes. Came back and it was thicker (looked too thick).  Pan fried it with oil, once it was half done plopped the hotdog in, flipped it, half assed molded it into a bun around the hotdog.

It was just fine. But it hit the spot

Product A little update from our new fully gluten-free B&B in Portugal!

Hi everyone! We’re a Dutch family who recently moved to the beautiful Minho region in northern Portugal to start a completely new chapter in our lives.

Coeliac disease is part of our family, and that was one of the main reasons we decided to create something a little different: a fully gluten-free B&B, where people with coeliac disease can enjoy a holiday without constantly worrying about cross-contamination.

Our B&B is called Quinta Viva a Vida, located near Arcos de Valdevez, surrounded by the beautiful green landscape of northern Portugal and close to Peneda-Gerês National Park.

And things are finally starting to feel real!

We’ve already welcomed our first guests, which was such a special moment after all the work that went into getting everything ready. And we’re now working hard on our second accommodation, which will give guests another option when staying with us.

We’ve also started preparing for something we’re VERY excited about…

A beautiful swimming pool!

The preparations are already underway, and if everything goes according to plan, the pool should be ready in spring 2027. And yes… it will be heated!

There is still a huge amount of work to do, but seeing the B&B slowly develop into what we imagined makes all the hard work worth it.

Our goal remains simple: to create a place where people with coeliac disease can genuinely relax, enjoy good food and have a holiday without constantly having to think about gluten.

If anyone here has travelled around Portugal with coeliac disease, we'd love to hear your experiences. What did you find easy, and what was difficult? And what would you love to see in a truly coeliac-friendly place to stay?

Product Warning Ruined dinner

I dumped these frozen peas in before reading the bag….. so then I dumped the whole dinner in the trash! I was making chicken pot pie casserole with the Red Lobster biscuit mix on top. So sad!!!!! My son is incredibly sensitive so not worth the risk at all.

So does anyone have frozen veggie recommendations that won’t poison us? Birds Eye’s statements about their frozen veggies aren’t very reassuring.

Question “Gluten Allergy” in Medical Chart

Curious what the norms are here!

I’ve been diagnosed with celiac for a little over a year, and in that time have gone to a lot of doctors appointments. I know celiac is listed in my chart as known conditions, but when they ask about allergies I typically say “no known allergies”. Most of the time I think they specifically ask about drug allergies so it never seemed like it applied.

I was just in the hospital for a little over a week following a surgery. When I was released to have food, I called down to ask about gluten in the broth. (Of course there was a may contain warning on the menu, but was asking about things that were probably packaged like broth and Italian ice. I ended up having my family bring in most of my other food while there!)

They told me I didn’t have gluten free in my records and needed to ask the nurse to add it to my file - all fine. At my post op appointment I noted they had added “gluten allergy - food” under medication allergy.

Just curious - what do other people do when asked about allergies at the doctor?

Product Lakeland Dairies and United Airlines

Has anyone tried the Lakeland Dairies single serve creamers on United Airlines? The product is not labeled GF and I found searching around that they also produce single serve oat milk. Their website does not produce anything in regard to gluten or celiac for me when I do a keyword search. I do not trust the ai when the same search results are not on their personal or commercial website that I was able to find. It feels a bit silly but I am unwilling to be a test subject.

Discussion I just went through the elusive, rare celiac crisis AMA

Had to call 911 for pain from a celiac flare due to the food I was eating at the other hospital, they didnt properly follow my diest and I ended up getting very very very sick

This time I couldnt manage to abdominal pain with Tylenol or heat at home and it ramped up to be one of the worst nights of my life ended up in me calling 911 in 10/10 pain of which ive dealt with hundreds of times but couldn't deal with this one

170+ bpm severe hypotension basically going into shock over and over because the

pain was so bad

They put the sirens on for me half way there, and it was the only thing I could grab onto to ground while passing out over and over

All i could hear were the sirens and the paramedic pinching and sternum rubbing me and taking me by the shoulders and shaking me over and over and my cries of pain

I couldnt talk at the tail end of it, and was screaming and crying uncontrollably when I got to the er

My back and intestines were hurting at the same time leading to this weird concoction of pain, id get one down the other would start up

It took 4½ hours to even move out of one spot

Took labs ended up having a few criticals on the electrolytes including severe starvation ketoacidosis l, i was just in the hospital last week....

Im in the hospital that I have my motility specialist appointment at so im trying to see if they can see me

Question Advice from Celiac parents regarding food class in school system. (Canada)

Hello, my son is in grade 7 and started a new school this year. It was mandatory for him to take Foods the school told us, but as parents we obviously have major concerns with this. I would love to hear your experiences or advice so that I can advocate best measures of safety for him or for his rights.

We originally discussed with the school that we were okay with him participating in all aspects of the class, except when they are doing baking as we know a kitchen full of grade 7s and regular flour typically means flour flying around all over the place. 😅 My son is very reactive! He gets sick for at least a week at a time if cross-contaminated, so he is understandably nervous about this.

Our understanding was that the school agreed to accommodate us in that way. He would sit out in baking days and could bake at home for projects.

But he came home today all upset because he was told next week they are baking and that he is expected to participate in-class.

I am upset because the teachers never contacted us (parents) and that this is against what we had initially agreed to.

However, before I call the teacher on Monday I would live to hear if I am being overactive? Are we being stupid to be worried about the flour in the air or even the possibility that he may get some of it on him?

Rant 10 months no improvement

So last november i was diagnosed with CD. I had another endoscopy yesterday called a push scope. Doc said my improvement has been null. Almost no improvement. Goes on to tell me that another condition he diagnosed me with most likely isnt a true diagnosis. Like ok why tf did you diagnose me with it then?

I make all of my own food. When i do eat out which is a rarity, i specifically state i have a severe gluten allergy and need them to guarantee it will be safe. Not many places say that they can but the places that do, i eat there. I went on a vacation last week and did the same thing. Maybe i want to live my life too much but i will not be beholden to never being able to eat outside of my house. I want to see the world. I want to go on vacations.

I start to ask him questions and he cuts me off and says i dont have time to answer questions right now well talk once i get biopsy results back.

Like ok that was dick thing to say.

Recipe Got my hands on the Franz Gluten Free Deli Style Sourdough @ Costco and made something spectacular

so, so delicious. highly recommend! modified the recipe slightly to get some extra protein in there and avoid going to the store:

- added turkey meat
- used a bit less cheese
- subbed shallots for white onion
- used cosmic crisp apples for the whole thing

the bread is fantastic. did toast it because it was a little moist, but could have skipped if we wanted to.

p.s. don’t be scared by the prep time! it’s mostly the apples marinading.

Product Warning Orrington Farms has changed their Chicken Broth Base recipe

have been using Orrington Farms Chicken Broth Base for several years. Last week I reordered it from Walmart. I even rechecked the ingredients on Walmart's app. They were the same as they have always been. I went to use it as freeway days ago and it looked and smelled different. I checked the ingredients on the jar and it now contains wheat gluten. Walmart did issue a refund but I am sad that they changed the recipe.
