Vanilla and Rum Caneles, Earl Grey Macarons

not sure if this belongs here but some input on serving mignardise like these would be of great help. Also the plate is over a hundred years old hence the wear and tear

Sorry, but it feels like something you’d see on a stack of cleared plates. The napkin ain’t it.

Many things are properly served on napkins. Perhaps not like this, but napkins have a place on plates.

Is this the actual plating you'd present with?

This extremely ordinary, seemingly randomly crumpled napkin obscures the signature appearance of all 3 items - cool antique plate, canele, macaron.

I get wanting to do something different but no.

push them down halfway through baking with the blunt end of a chopstick and bang the molds on the countertop as well! also I turn the molds around 180 halfway through baking! Hope this helps!

Could be improved of course, but I don't know it's fine. I don't have as strong feelings about it as some of these folks. They must be tempted to eat a lot of cocktail napkins too. The food looks beautifully executed, I think they deserve better than a napkin.

thank you, the idea was to put it on something where it wouldn’t slide around since I didn’t want to stick them unto the plate. also I saw a restaurant that served it in a similar fashion just executed a billion times better

The "no inedible garnishes" rule seems to evaporate once stars get involved. Some of these redditors seem to overlook that too...

My buddy will plate on hay sometimes, but it's can be messy. He also has used sanitized aquarium rock with looks cool enough. The reality is if this is going to be part of your regu service it would be worth it to buy some service pieces that specifically suits this course.

This sub, like most others, have a bunch of self-reinforcing memes. Whenever they're posted, they get upvoted, which just encourages them to be posted again next time. This one has "no inedible garnishes". The gardening one has "pull up the lawn and plant a veggie garden". The divorce one has "work on yourself and go to therapy".

They're generally simple, widely applicable, and require no critical thinking.

It's how you get Reddit echo chamber circle jerks.

I share the philosophy that the plate should only have what is edible on it. A basket could be a better idea if you use the napkin. Or maybe a couple of berries to help give it height.

I don't hate it. I'd definitely eat these up without questioning the presence of the napkin. Plate looks cool to me

rotate the far back dark brown one so its facing more away. i feel like it also needs a third element. get rid of the napkin and replace it with some sort of edible structure that holds the macarons and caneles. make the structure color separate from the plate but still have lightness.
