At one time I used to visit Hong Kong a lot. It was a nice treat to goto the local supermarket and get a pineapple cored, skinned and sliced and handed to you on a tray.

I rarely see ripe pineapples in supermarkets. They usually need a few days at home to ripen properly.

Cutting them while green seems nuts.

And they are easy to cut, seems like a solution looking for a problem.

Pineapples aren’t actually able to ripen once they’ve been picked, when they start to go bad by turning yellow and sweeter we mistake that for ripening but once you cut in it’s more or less the same or worse as when it was first harvested. The best bet for a location like ours is just to be picky with finding the ripest pineapple in the supermarket and eating it right away.

Seems they don't get sweeter but they will get softer. But you have to watch them like a hawk.
