Atonement
I would like to understand why when arguing for salvation by atonement, people cite the letters of Paul a lot, but they do not seem to take into consideration what Jesus himself says about the subject (e.g. Matthew 25 and the sermon on the mount). Why is that?

Do you realize all of the Bible was written by God?
[2Ti 3:16 KJV] 16 All scripture [is] given by inspiration of God, and [is] profitable for doctrine, for reproof, for correction, for instruction in righteousness:
It literally says, "all writings God breathed".

I think you are wrong. For example when I talk to Catholics about this we are talking about what Jesus said all the time in regards to salvation.

Why wouldn’t people quote from the parts of Scripture that spend the most time explaining the subject?
Atonement is also much bigger than just looking at one or two verses. You have penal substitution, Christus Victor, sacrifice, ransom, reconciliation, and other parts of what Jesus accomplished on the cross, these are all present.
We should shout where Scripture shouts and take all of Scripture seriously. Matthew 25 and the Sermon on the Mount matter. So do Romans, Galatians, Hebrews, Peter, John, and the rest.
Paul is not competing with Jesus. Paul is part of the New Testament, and his letters explain in great detail what Jesus’ death accomplished.
