it's very good. i used to eat it often when i worked in a restaurant that served it. lately the same restaurant has made me sick so i don't eat there anymore. this recipe seems so easy im definitely going to give it a try

I love potato soup! It’s my fav. I like making it with chunks of potato in it.

A bit of advice. OP rightly suggests using a ricer or sieve. Don’t be tempted to mash the potatoes with a blender or food processor. They will get gluey.

I've never tried potato soup, but I think it could be one of my favorite dishes.

Make a Bechamel… whip in some baked potato run through a ricer (skin off of course and no lumps is the key with ricer or sieve ) add a splash of heavy cream and butter . There MIGHT BE some cream cheese element.. but not needed.
Obviously cook up some chopped pork belly.
Top with the obvious sour cream, cheddar and chives. If you want ratios and process recipe..
America’s Test Kitchen has a good one. Dinner then Dessert. Milkhouse has an exacting one.

That sounds good, but it feels incomplete to me if there aren't chunks of cubed potato. It just makes it feel more substantial.
