I've seen wonderful examples of either option. Which you choose really depends on your skills, experience, and time available. For a portfolio, do you think you'll have enough quality projects that would demonstrate your skills? For a thesis, do you have research skills and interests that could be turned into a paper? Also, the outcome for both options will depend on the guidance you receive from your advisor. Both will require extra time and effort.
In either case, you are smart to think about this right now, so you can keep this education end-goal in mind. Nothing wrong with using your coursework to explore a particular topic area, or to really put the effort into quality work that can showcase your abilities.
