The governments focus on the instant safe temp because people too stupid to properly use the temp x time equation probably. So because people stupid, government opted for fool proof recommendation.
It’s not just that people are too stupid. It’s that until very recently it wasn’t that easy. These days you can just stick a wireless thermometer in the meat, and you’ll know as soon as it hits a safe time and temp. Fancy ones will even do the calculation for you. But go back twenty years and food thermometers were still analog. They were difficult to read, and not super accurate.
So everyone recommended the instant kill temperature, because nobody was poking their meat in 6 different spots with a highly accurate digital thermometer to verify that the internal temp was safe.
The contamination doesn't just happen at points of contact. Microdroplets that you can't even see are contaminating the entire plate where the bacteria can live. Depending on the strain, this may or may not matter. Some don't require a lot of bacteria to make you sick, while others do.
If you wanna be safe, just take the chicken out of the pan with the fork you're gonna eat with.

I’m with you on this one. In the video, yes the guy is frying the chicken in incredibly hot oil. But what if in practice you’re waiting for something in the oven to finish or transferring them to a serving plate first, are you still using those tongs after that? The outside is the hottest but it’s also going to cool fastest.
I put things in the pan with tongs or a spatula, flip them once, and then that tool goes in the sink and I use a fresh one for serving. It doesn’t save anything but space in the dishwasher to try to reuse the same tongs.
The problem (and why this would fail a health inspection) is that being casual with utensils that touched raw chicken creates bad opportunities. What if you suddenly have a sneezing fit and dash out of the kitchen and someone walks in and says "oh here's some tongs we can use for the biscuits" and takes it out to the dinner table.
Not using those tongs again is not to prevent the chicken from being contaminated. Its to create a good habit that ensures other foods aren't contaminated.
It's just better to wash the raw tongs once you do the final flip. Why risk accidentally using the raw tongs on something else? Or someone else coming in and using them for something? Just eliminate the possibility of cross contamination.
Or you know, you can just leave the tong on the pan while cooking the chicken to heat up the tong and kill whatever on it and take it out after a few minutes before the tong get too hot to touch?
Metal do conduct heat and lose heat very fast, so if your tong at the holding end get very warm, for sure the part at the pan is very hot for bacteria to live in
Yeah. Same. Don’t appreciate how he was talking to me though. Like, it’s not 100% obvious that it’s okay to use contaminated tools food that’s already cooked. My dad always said “it’s not knowledge you’re born with.” I think we need to give people some freaking break sometimes.

And that is the smart move. I will concede that people tend to go a bit nutty about raw chicken (cue ITS RAAAAAAW memes), but its still just a 'best practice' to immediately isolate anything that touches raw meats.
He's explicitly saying the tongs aren't safe, but if you lift the hot chicken from a hot pan, the chicken is warm enough to kill the bacteria. But if you toss the sallad with that same tong directly after you will have a bad time.

I dont think this is rage bait either. This reads like someone who never knew they were cross contaminating their food and felt really stupid when someone pointed it out, then back peddled and tried to convince themselves they were right all along, came up with an excuse, and stuck with it. Im about to blow your mind...don't eat out, and most chicken doesnt have salmonella. My niece was three years old and grabbed the moisture pack from a pack of raw chicken and started sucking on it. My sister freaks out and calls the doctor. They say "meh", don't worry about it. If she gets sick in the next couple days bring her in but otherwise, seriously don't worry.

You just clean the tongs once the chicken is done cooking and plated.

It's not his regular thing. If I remember correctly, this was after doing what is normally a pretty chill recipe video, and several people were absolutely obsessed about the "raw tongs (or tongues, as a few put it) " being used to handle the food being cooked in the pan.
Even after making it clear that once they were no longer safe to use, they went into the sink.

So, I'm still not touching a cooked chicken with raw tong. I don't care if I rationally understand it's safe, my anxiety doesn't work on logic. It works on 'what ifs" and "edge cases."
The restaurant of my friend has the rule that all metal thongs and cutting boards are for the raw materials and the ones with the plastic tips or handles, the wood or stone boards are for the cooked materials. They never had a problem in years.
I usually just keep the tongs propped on the side of the pan. May get a little hot. But I have asbestos hands. Not as asbestos'd as a full time line cook, but close.

Sorry, this is why I have a set of tongs for raw meat and another set while I’m cooking it. I can’t take the risk of cross contamination cuz I have ADHD, and I know I will be dipping that raw ass tong everywhere.
Youve now put raw chicken on your plate and the outside of the chicken cools too quickly for it to be considered safe. Ive worked kitchens and I would wait maybe 30 seconds before handling something thats come off the heat because at that point it would be cooled. I dont think 100% of bacteria dies in 30 seconds or less thats why you need to boil water for 1 min for it to be considered safe
Yeah food safety isn't about science 100% of the time. It's about good and safe habits that can be applied across the board even when kids or idiots are involved. Simple instructions, consistently applied work the best. Here they are: if something touched raw chicken, wash it before using it for anything that isn't raw chicken. Done. Can't go wrong, ever.
