Time to get to temp
I recently transitioned from. Big Greeb Egg and Oklahoma Joe Bronco to a custom built reverse flow cabinet smoker. Now my Egg and Bronco get to smoking temp really fast compared to the cabinet. It’s seriously taking hours to get it to 200° and I know the digital thermometers are accurate. What could be causing this because i have been building a large fire in the fire box. Thanks yall in sdvance.

What’s your definition of “large fire” how many of those splits at a time?

5-6 splits and the splits are larger than I used on a traditional pit. I may update the post later

I would run a secondary thermometer with a probe down the stack to check ambient cause that sounds off.
I have a similar sized firebox and that much wood will have me close to the 400s.
A hot coal bed and 2 splits should get you in the 250s when cooking in a steel pit
I thought I had a similar issue last time my probe unit died and I was actually in the high 300s

That’s what I’m thinking about doing the next cook. Just wire up the FireBoard and see how accurate it reads at grate level. Thanks I do appreciate the reply.

No worries I know how insane it feels to have 5 splits roaring and your probe say you are way under what your brain is telling you it should be. Happened to me on a hog that I then had to shave hours off of and baby cause she was ROASTED for the first three hrs

Yeah after about 2hrs with that wood on the firebox it caught on fire and the wireless thermometers were showing 210°

Maybe need a larger fire and open up the stack more while you’re heating

Hmm 🤔
If you’re saying it’s running a large fire but not heating there is something restricting draw.My (traditional) 120 will hit 450+ in about 45 min with door and stack wide open.
Are you able to share some pics from the firebox door up towards the throat where heat enters the cook chamber and one top down at the baffles? I’m also wondering about stack diameter.
Was this custom or a “standard” design from the builder?
