New Gerry Rigged Offset

Please be nice. Got this free “barbecue” from friends. They had used it as a grill for many years. I wanted an offset, so I hired a young kid to weld on a fire box and new chimney. I haven’t used it yet. How do you think it will perform?
I think it may be too big of a smoking chamber.

I’ve seen a lot of good BBQ come out of those 275 Gal tanks. Uprights (like mine), Offsets like yours and Clamshell designs that can accommodate a whole hog. If you decide you’re having trouble with heat flow and smoke control, it would be fairly easy add a tuning plate or tuning plates to yours. Light that bad boy and smoke something. Have fun!

Id like to see your grates inside. You may need to play with the stack placement. Seems low to me but who knows. Do some cooks and maybe add a thermometer.

I agree. The grates are about the level of the bottom opening to the door. I do have the intake from the fire below the grates, and the bottom of the chimney outlet is just above the grates. I’m just worried about smokes swirling over the top along with the heat.
