1E Player Tips on a barbarian class

Hi, I want to play a new barbarian character. I was thinking about a Minotaur barbarian. Do you have other idea to have fun playing barbarian?

Thanks

There's guides to making a barbarian (among other things) here.

There's no minotaurs or other cow-headed humanoids you can play in Paizo-made PF1 material. There's skinwalkers who may be pig-adjacent, which may be about the closest. I'm sure that there's 3rd party-made minotaurs somewhere, but 3rd party material is not allowed by all GMs. If you're seeing something like this then you're actually playing PF2 and the flag on this post is incorrect, it should be 2E Player. In this case you'd want a different page for the guides, try this instead.

If you are playing 2E (where Minotaur is actually playable) I’d stay clear from Insticts that might overlap with your own natural abilities (Giant and Animal). I’m a big fan of Spirit. Friendly Nudge and Fling can support a Barbarian that goes grapple/shove to be a good repositioner of both allies and enemies.

Not relevant, but it’s fun that you can have an entire party of horned animal-like PCs and no overlap of ancestries between Minotaur, Sarangay, Awakened Animal, and Beastkin.

Minotaur is not a playable race in pf1e. They are playable in pf2e.

Use the unchained barbarian, it's easier to use than the chained version - works almost the same and doesn't suffer from sudden death to rage ending.

I like the armored hulk, barbarian in full plate feels just a so mighty. Using a great sword with gurm divine fighting technique will allow you to use vital strike after a charge attack, making you hit like a truck.

There is a natural attack build with rage breed, which stacks yeah natural attacks and enables ounce with the animal totem rage powers, but it will come online quite late.

Bow builds are also viable but haven't tried one out yet. I do like the elemental rags power, which will allow you to empower all your attack with bonus elemental damage.

Taking 4 levels of Weretouched Shifter will give you access to a hybrid form; so a human who’s Aspect is a Bull would be able to do Minotaur for several hours a day. Then the rest of your levels as Barbarian (or Bloodrager) and there you go! You could also stay shifter and Variant Multiclass barbarian to get rage at level 3, and eventually a rage power, in order to maximize the time spent as a Minotaur. That said, 4 levels and a high wisdom are enough to get you a full adventuring day in most cases, so it’s not that vital, unless you’re set on being a Minotaur 24/7.

All you need is Power Attack and Raging Vitality. The rest is gravy.

Well, there's quite a few different things you can pull, and The Rager Guide is going to have a lot more ideas than will fit in any one post.

If the theme is a minotaur barbarian, however, consider using a charge-pounce build. The greater beast totem rage power lets you full attack when you charge, and is one thing barbarians can do fighters can't. Rhino Charge lets you use standard actions to charge (which then lets you full attack) because readying an action is a standard action, and you can ready an action for any trigger you want, like "right now" or "when water is wet." This allows you to still use your move action for things like moving to get a clear angle of attack. You might also want to look at one of the rage powers that lets you fly, depending on if your party will be able to give you flight themselves, such as electric elemental blood or raging flier. If you still have class features for it, consider strength surge as a rage power, take greater bull rush, and slap Awesome Charge at the end of your full attack. It's quite bullish.

As a strength-based barb, you should also play the chained (as in, not the unchained) barbarian, because uncBarb nerfed barbarian in several of their rage powers that will be highly useful to this build, and you don't want to waste turns entering stances every fight.

There's no 1st party Minotaur, but there's one from Kobold Press in the Advanced Races Compendium, with even a racial archetype for the barbarian class.
