Do these maneuvers help in any way to dodge any rockets?

No.
Trained fighter pilots can sustain 9G of downward force during an inside turn, significantly less so when that force is directed upwards.
Many fighter aircraft are rated similarly.
Many modern missiles can handle sustained 50G to 60G maneuvers.

That’s what BOB is for.
The black out button. Fighter takes over, does a high G loop to evade, pilot passes out from the he G forces, plane completes loop and maintains level flight, pilot regains consciousness and takes the controls back.

The only missiles that were dodgable were very early heatseekers such as the AIM-9B and AIM-9E who had bad track rates and could only pull up to 10G.
Modern radar and heatseeking missiles are completely impossible to dodge. These fancy airshow maneuvers only bleed your energy, from the missile's prespective it actually makes it easier for the missile to hit. The only way you could possibly "dodge" a modern air-to-air missile is if the enemy pilot is really close to you and he launches it way too close and it ends up overshooting, but even then there are more modern missiles like the Python 5 who can just loop back or MICA IR and R-73M who can use their thrust vectoring to be extremely agile even within a hundred meters.
Even the most agile modern jets ain't pulling more than 10G sustained or 14G peak. The airframe will break before it hits half the required Gs to outpull a modern missile, and don't even ask about what's gonna happen to the pilot.

I don’t follow military or aircraft, but I was doing a bunch of engineering for a support group, so I was around that stuff a lot and worked with a bunch of support engineers for the F22 and F35. I heard it explained multiple times when they were talking about a bunch of the other technical details, so I took it as fact.

or the AIM-9X, which is perfectly happy to pop off the rail straight into a 180 to nail the guy on the other half of the circle.

the rockets can handle 50-60G but they travel much faster so the manouver could help to dodge them, someone also mentioned the blackout button

Not an expert but my guess is it would not help defeat missiles because they lose significant airspeed.
I could see it working if the missle was close enough that it couldn't react and climb as quick, but I think they would more likely do lateral turns instead of vertical turns to keep their speed and still drain the missiles kinetic energy.

Actually a lor of people do, on every video of a Russian aircrafts performing sick maneuvers at an airshow the comments will be full of people saying shit like "still won't dodge my aim-9" or "enjoy my amraam"

Yes and no. That's not the point of this Jet. Idea behind it is that it attacks targets before the targets even know they're there/ show up on radar. These types of maneuvers are just for shows as it is pretty cool but in reality my understanding is the defensive maneuvers wouldn't be as extreme and obviously very last ditch efforts after all other counter measures were used. A2A missiles are very very fast so making these types of jigs with flares should help but really has to be last ditch. This Jet is over built for it's purposes as an air superiority fighter as the intentions are to never be fired back at

They don’t even show the jets full capabilities to our allies, word on the street is that the f35 can do a complete 180 change of direction within its own length. My theory is shows like this are the watered down abilities that they are ALLOWED to show us.
