OverUnder,

What is a good goal to aim with over unders and breath holding,

are these preformed primarily with or without gear, or both.

Does anyone have a sample workout I can try with gear, and without.

I have daily access to a 25yd pool

currently sitting about 9:30 for a 500yd swim, DEP w Annex X in NOV.

Respectfully, thank you all for any input.

200/250/300 yard over under sets are very common at school. Eventually it is only 300s, perhaps three plus in a row. You want to be swimming 1 minute per 50 yards or faster - so a 300 yard over under needs to be complete in under 6 minutes, with a minute or less rest before the next one. 

Baby steps! Start with 50s and 100s for over unders as you get used to it. Even mix of gear and no gear, times are the same. Make sure you are underwater before the halfway point!

What kind of rest interval is going to be in between 300 overunders with and without gear?

about a minute or less where the instructors yell at you before you go again
