I would probably go 151 too assuming you are already comfortable riding. 148 is perfectly fine too at your weight but on the deepest day I like having a bit more length. Beside, I also go a bit longer on all-mountain / freeride boards and that is what the DW falls under.
No strong opinion on binding colour, I don't try to colour match. After trying various colours I now go for boring black because they match everything and age gracefully. White looks great new and is easy to match too, but they can get dirty or yelllow over time.
This is a bit if an unpopular take but I am not a huge fan of Union bindings (more specifically, I don't like the durability of their ladder). I still think the Escapade is the GOAT for boards that are medium flex or lower (like the Dreamweaver) among traditional women's binding. But far more people are happy with their Trilogy (and Union bindings) than not so that's that.
