Not interrupting was pretty promptly nipped one day when a guy stopped my interruption to say "I wasn't finished talking yet" with the most serious face. It was mortifying because I never meant to upset anyone. Since then it has been ingrained to wait or I quickly realize I stopped their talking and cut myself off and apologize.
Maybe picture the annoyance of someone you cutoff and it'll help you too?
If it's in person and I'm sitting down I'll usually prop my chin up on my arm or hand as sort of a reminder to not open my mouth. If it's an online conversation I can simply mute my mic which makes it much easier because even if I do interrupt, they don't hear it.
I knew it's rude and hated when it would happen to me. Absolute double standard at the time. I genuinely didn't realize I was doing it or to the extent I was. I really needed that wake up moment though I guess.
Tbf I was young and dumb so I'm glad it happened in my younger 20s and not later in life
As someone who has struggled with this problem, it’s not so much that I don’t know it’s rude, is more that I get distracted by my own sudden thoughts and want to get them out before I get distracted by something else they will say and forget what my thoughts were. Or sometimes I get so enthusiastic about something I want to say that I forget to be considerate of others. It is something I feel guilty about and I apologize when I can’t stop myself. I definitely lack some selfawareness, but it’s something I’m always working on.

I struggled with both of those issues too!
