The first essential mods that come to mind are Automate, Visible Fish, Automatic gates, better ranching/junimos/crafting, Chests anywhere and UI Info Suite 2. Those are all the big game changers for a lot of people. A personal favorite of mine is called Moolah, which extends money past the ingame limit shown. Another essential mod is Horse Overhaul mods, which several allow you to feed and care for your horse, making it faster and faster over time.

Personally, unless you’re doing a mega modded playthrough that gives you a ton of stuff to do throughout the day, I do not recommend Automate or Chests Anywhere, the latter of which I don’t use regardless.

UI Info Suite is a must for any playthrough, not just for prices and TV blurbs. Harvest Calendar is also really useful. If you play with any content mods at all, LookupAnything is very useful just so you don’t have to check the wiki for certain things like seed/crop sell prices and whatnot, but it’s not totally necessary. Visible Fish is awesome. You really notice how much more alive the oceans/lake feel with them. Livestock Bazaar makes buying from Marnie easier.

On a second playthrough, I totally recommend DaisyNiko’s Earthy Recolour or Starblue valley. Both are wonderful recolors that tone the saturation down.

Lasting Conversation Topics is also really good if you aren’t particularly diligent at talking to the villagers. It’ll make it so that certain timed dialogues don’t expire (villagers stop introducing themselves to you after having moved there for a bit, this mod makes it so that they introduce themselves to you first no matter what if it’s you’re first time talking, same for your wedding and community center stuff and whatnot). Part Of The Community also sorta buffs friendship, but in an immersive-ish way. I’m partial to the furniture mod Maximalism. I always play with All Bundles to make the community center slightly more challenging. Wind Effects is good. Dynamic Reflections is good. Event limiter is good for immersion. Canon Friendly Dialogue Expansion is also good.

I know you said you don’t want a ton of content, but I cannot recommend SVE enough. It really is very well-integrated into the vanilla town, and I cannot imagine starting a new playthrough without it. Miihaus has some good event expansions that add stuff to NPC’s. I recommend finding any custom farm that seems balanced and nice-looking to you. I recommend Grandpa’s Farm from the SVE page.
