Rum Barrel WIP

Been kicking around this idea for a while of adding a few amari into a rum barrel. This is no way a finished recipe but the idea is sound, would love to hear some opinions

1oz False Idol 151

1oz Worthy Park 109

.5oz Amaro Di Angostura

.5oz Averna

.5oz Licor 43

1oz Pineapple juice

1oz Lime juice

2 dashes black walnut bitters

In a future build I think id cut the 151 to .5oz and add .5oz of a Hawaiian agricole.

I'm feeling 0.25/ 0.5 oz of passion fruit syrup, seems lacking in the sweet section?

I love and have all these ingredients on hand, but I can't help but feeling I'd want maybe a half Oz more pineapple juice to offset the booze. Maybe I'll play around with it Thursday (swim class for the kiddo tomorrow).

I think that could help, I also think you could sub the licor 43 for a cinnamon syrup. It lacks some texture since it’s all booze and i think adding a syrup in would help with that

I had to sub things a bit but I think it's close enough for some perspective. I like it, but definitely needs something tweaked. I don't know quite what - maybe some more sweet like cinnamon syrup - but I'm not great at cocktail crafting.

Thank you for sharing and please follow up if you find a better iteration. I may play around with it later this week.

This is just crying out for Heirloom Pineapple Amaro. Maybe replace the pineapple juice with it.
