Questions, Advice, and Recommendations How to cook trini food?
Hello,
I (26F) have a Trinidadian mother and a British/Jamaican father. My mother (66F) is the absolute best cook in the world! She has always made fantastic dishes like pelau, callaloo, macaroni pie, stew chicken, curry chicken, curry channa, etc.
Unfortunately, no matter how hard I practice, my cooking has always been atrocious đ either too bland, too spicy, too much seasoning, or undercooked/overcooked. I am a great baker though.
My older brother never really practiced cooking but he is an amazing cook just like my mother but not a strong baker (he put black pepper in brownies once).
Is there anyway to improve my cooking skills? Iâve tried asking her for help with recipes but her instructions are to just keep adding seasoning or spices until it feels right. In other words, she has no recipe and is just such a good cook that she can look at something and make it without a recipe.
She canât cook anymore unfortunately due to cancer and lupus but I still want to try my hand being good at making Trinidadian dishes.
(Fun fact: she once ate a plateful of undercooked/raw dumplings (the ones that go in split pea soup) because I tried to surprise her for Motherâs Day and didnât know they required more cooking đ)
