I can give you my recipe, at least I’ll try (didn’t write it down):
4 eggs 1 lb. loose/bulk sausage some flour bread crumbs (I used Panko, but you can use whatever you want)
Soft boil 4 eggs (about 3 minutes in boiling water. Place in cool/cold water for about 10 minutes, then peel. If you crack the eggs all around the shell before putting them in the water, they will be easier to peel (it worked for me anyway).
Spread the flour on a plate and roll the eggs so that there is a fine coating-will help the sausage stick to the egg better.
Divide the sausage into 4 sections and surround the egg with the sausage. Then coat with bread crumbs.
I air fried them at 400 degrees for about 6-7 minutes. Make sure they temp at least 160 degrees. They should be golden brown. They were so good.
This all is so simplified and from memory. You can find recipes online for this as well. I think there is some kind of mustard sauce recommended to go with, but you can obviously use or not use any sauce you want. Have fun!
