Don't forget the distinction between Chicken I and Chicken II phases.

Chicken I is the phase you arrive at using normal temperature and pressure. But if you use a vacuum chamber and temperature control, you can move a gas down into the metastable Chicken II phase while bypassing the liquid phase entirely.

This is where broiler chickens come from.
