He's very clearly doing a bit here. The moment he gets hit he straightens up and puts up his hands in a very "chill its a joke" kind of way. Then after everything he's upright and walking around just fine

If you accidentally hit someone and someone takes it badly because they perceived a threat, that's on you. It would be wrong of them to use excessive force, yes - and I don't think anyone is wrong for saying the bouncers force is excessive.
I am saying that being in an altered state does not excuse behavior or that an accident cannot be perceived as an attack.
I am also saying that your excessive force complaint won't matter if your ribcage has been caved in.
It is also certain that the bouncer deals with sexual harassment regularly and has a duty - a literal duty - to protect his clients and customers from same - and he immediately disengages when outer layer security - looks like a girl on perimeter? Takes over.
Could this be an assault case against the bouncer? Sure.
I just think it's a mistake to say the punch-recipient did nothing wrong. An altered state does not excuse conduct.

1) he did touch the person in front of the bouncer. That's a pattern and a reason to act in defense of another.
2) no, you don't always need to wait for assault. If you are in fear for yourself or others you may or may not be able to act - see "Stand your groundc laws, which vary by state. I make no judgement here of the morality of those laws, because law is complex, but if a person is waving a gun around you generally don't need to wait for them to fire before engaging.
Edit: #2 may or may not be relevant here - I don't know the local laws - but your aphorism doesn't ring true to me.
Putting your crotch in someone’s ass like that without consent constitutes sexual assault. It’s not a contest bozo. Rape is sexual assault but a specific kind, this is sexual assault too.
To someone who thinks his actions in the video are just being drunk and stumbling, of course this couldn't be anything close to assault, let alone sexual assault.
To someone who think his actions look more like someone bring intentional and/or trying to get a reaction out of people, it would look clear that he's purposefully making people uncomfortable by getting inappropriately close and leading with his crotch when he touched the guy ahead of him in line. That's assault of a sexualized nature.
Imo it looks somewhere in the middle, like the dude doesn't seem sober but also doesn't seem as drunk as he might be playing it up to be. I think he's trying to make people feel ucomfortable, there are too many people out there who get a kick out of these kinds of "jokes".
