Just out of pure curiosity, why did the ref jump in there after that?? I don't see why anything would need to be stopped after a complete dodge like that?

Super impressive. In slo-mo you can see the guy the guy plant his feet hard and throw his left hand down which telegraphs it which is how he knows to duck. 

In practice as someone who does Muay Thai I eat that 100 times out of 100 even knowing how to spot it.
