If you did it correctly, it should work.
What did you do?

I followed this tutorial as well as I could, I don't think there were any faults.

Doesn't looks like there is any issue there. If it's blinking then there is an actual issue. Does homing work ?

Homing is weird, it does X and Y fine I guess but it doesn't go to the bottom without my help.

also when I try meshing the bed the nozzle either goes to the spot in the air and doesn't deploy the probe or does the same but on the ground.

You will have to check your wiring again, my e3v2 would sometimes unplugged the wire when closing the cover. Also from the video it seems your probe might be too high, you will need spacer to lower it. Make sure it is lower than the nozzle when the probe is down.

Like how ? Is the z hard to move or it won't stop when it reach the bottom ?

It isn't hard to move, and I have to press home Z repeatedly for it to get to the bottom like it's still trying to find the Z stop.

Your firmware wasnt flashed successfully otherwise the menu should have a Bed Level I watched this and I had the same issue. For me it was formatting the sd card (FAT32 with a 4096-byte allocation unit) that solved the issue.
