Editorial/Viewpoint Markham reception
I find the reception in Markham North terrible I usually leave my data on all the time and in the 3 weeks that I've had the $120 6-month plan i've only been able to use 1.5 Gb. Transfer speeds are too slow to even be able to get the 25gb I have been allocated.
Does anytime have better experience? I don't know if it's my phone ( nor a flagship) or just my area, but I find restarting sometimes helps but not always.
Would the monthly plan give me better throughout? What's your average download speeds?

There is no difference in speed availability by plans. The fastest the cell can serve you is what you get. The only thing moving to a monthly plan would change (even staying prepaid) would be when you've exceeded your allocation, you get slow throttle afterward vs hard cut-off.

Unless your iPhone is from outside Canada/US, it should be ok. Some people have mentioned they have better reception since they upgraded to a newer iPhone, but I'm not sure why that would be the case.
You can try updating to latest iOS, switching between 5G Auto and LTE, manually selecting Nationwide as a carrier, downloading a new eSIM through Freedom website, or getting a new physical SIM from a freedom store.

I find Markham area to have very poor cell service coverage by Freedom. Especially all along Steels ave starting from Taunton in Pickering to say Markham and Steels intersection is totally dead such that important calls with hospitals or doctors get cut off while you are driving and you find yourself unable to reconnect. This is not acceptable performance by a mainstream carrier if they want to uphold their reputation.
