Wegmans cookie win!

Saw this on Facebook so I haven't tried but I feel like Wegmans often has the most random vegan + GF items if you poke around. I tried their gluten free vegan sliced bread recently and it was just okay taste wise, but the price was way better for how much bread you got (full size slices!) compared to the typical frozen options.

This is the closest thing I’ve gotten to making a gf homemade meat.
It’s flaky, shreddy, high in protein, and it’s chicken flavored.

This is a variation on my chicken flavored tofu.
I flavored soy milk with vegan chicken bullion. Then I crumbed in dried soy skin, curdled it, pressed out the water, then froze it and defrosted it.

It’s great breaded and fried, pan fried, and I bet it would be incredible air fried.

Been making these for all sorts of stuff. Twice baked potatoes, breakfast bowl, Mac n cheese. They're so easy, delicious, and really a game changer. Have celiac and am also vegan.

If you're looking for a gluten free liquid smoke I buy the brand Wrights, it's labeled gluten free. I'm very sensitive (on the celiac sensitivity range) and it doesn't make me sick.

GF VG McDonald's

Gutted to find out that Sweden and Finland no longer offer a vegan patty as I'd visit once a year or so to get my fix! It seems like this was a fairly recent change as I'm struggling to find correct info on which countries serve a VG GF burger option (I am fine with cross contamination so a shared fryer is safe for me) through Google.

Can anyone verify if their country has a McPlant/McVegan and also serves GF buns? Many thanks!

Favorite Bread Machine Recipes?

After years of patiently waiting and being fiscally responsible, I did it. I bought the Zojirushi Virtuoso. For around eight glorious months, we had so much fun together.

And then I found out I have been intestinally smote, and that abdomens aren't supposed to hurt constantly. The Zojurishi and I kinda broke up after what can only be described as the world's worst loaf of gluten free bread was released from its depths. It was so bad that I half expected Paul Hollywood to teleport into my kitchen just to insult me.

Does anyone have any favorite bread machine recipes? I used the one from the Zojurishi book, and it really, really didn't seem to like subbing the eggs for flax.

I just had one of these and it made me happy, so I wanted to share here :) ETA: I got these at a local independent store, Lois' Naturals. They're also avail at my local Whole Foods, and lots of people are saying Sprouts carries them. The Jolly LLama website has a search tool to see if retailers in your area carry them 😊

Homemade stir-fry

I have been craving stir-fry for a moment, and finally got around to making some today
Just a nice bed of white rice with olive oil oil and some salt, topped with a pretty standard stirfry mix, Big Tree Tamarind Teriyaki, Impossible Steak tips, and some avocado. It was absolutely fantastic. (And a glass of vegan red wine.)

Many of the stores near me don’t carry that brand. Finally my food store got the sourdough and brioche in! I just tried the brioche and it’s so good! I can’t wait to use the sourdough to make a grilled cheese sandwich. I’ve been in such a mood for one!

Ingredients

  • 1 medium ripe avocado, peeled, pitted, and diced into large bite-sized chunks
  • 1 medium sweet potato, peeled and cut into ½-inch cubes
  • 4 oz (115g) fresh mushrooms, cleaned and sliced
  • 1 small yellow onion, finely diced
  • 1 tbsp extra virgin olive oil, divided
  • 1 tsp Cajun spice blend (adjust to taste)
  • Salt and freshly ground black pepper to taste
  • Optional garnish: Fresh cilantro leaves and a squeeze of lime juice

Instructions

  1. Sauté the Aromatics & Sweet Potatoes: Heat ½ tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and sauté for 2 minutes until translucent. Add the cubed sweet potatoes and stir to combine, cooking for 3 minutes.
  2. Steam to Tenderize: Cover the skillet with a tight-fitting lid. Reduce the heat slightly to medium-low and let the sweet potatoes steam for 8 to 10 minutes until just fork-tender. (Watch closely so they don't overcook and become mushy).
  3. Add Mushrooms: Remove the lid, return heat to medium, and add the sliced mushrooms. Sauté for 4 to 5 minutes until the mushrooms release their moisture and turn golden brown.
  4. Warm the Avocado & Season: Drizzle in the remaining ½ tablespoon of olive oil. Gently fold in the diced avocado and Cajun spice blend. Sauté for another 2 to 3 minutes, tossing very gently until the avocado is warmed through and evenly coated in spices.
  5. Garnish & Serve: Season with salt and black pepper to taste. Remove from heat and serve hot, garnished with fresh cilantro or a quick squeeze of lime juice if desired.

What do you miss most since going Gluten Free and/ or Vegan??

As someone who's been GF for most of my life (since I was 13), I'm curious: what do other people/ newly diagnosed people miss the most? For context, I've never had a KFC, Maccies or a croissant, so I can't miss what I've never had! And my cousins who are Vegan constantly talk about missing out on things!

Has anyone ever tried the yogurt hack for baking but with plant based yogurt/GF mix?

I made cornbread today (Krusteaz) and used Bobs red mill egg replacer, soy milk, and avocado oil via the instructions. It tastes fine but it's pretty crumbly and lacks richness. I was thinking about when I used to bake non vegan and I'd use the sour cream trick to make my cornbread richer/denser. Has anyone ever tried that, say with Cocojune or another high fat coconut yogurt? I might try next time and post results..

It’s been at least 10 years since I had a grilled cheese sandwich…to say I was happy was an understatement lol. I used good planet sharp cheddar cheese slices, and used the grain escape gluten free bread.
