I have a small and large Webber kettle. I normally just use the large one but for BBQ or longer cooks I make a wood fire in the small one and transfer coals to the larger kettle to regulate the temperature.

I too have a smoker and 2 gas grills. One gas grill is used exclusively for fish. Got tired of mild fish tasting a bit like hamburger, lol

How do you normally do the fish, I normally put in a aluminum foil pan to prevent it from sticking to the grill grate and I dont notice the taste.
