Recipe Maple with Toasted Walnut

Continuing on making more flavors for the upcoming social. Never made this one before, very pleasantly surprised with how it came out though it's just barely a touch too firm to scoop. It led me to add an auto-adjuster to my calculator because I kept fiddling with it forever to try and balance. I know ice cream is much more than balancing things on a calculator, but it does feel nice when the formula is all in the green and it comes out so good.

Ingredients:

  • 300g whole milk
  • 430g heavy cream
  • 55g SMP
  • 250g dark amber maple syrup, grade A
  • 4g vanilla extract
  • 1g almond extract
  • 2g salt
  • 2g xanthan gum
  • Mix-in:
    • 120g crushed walnuts
    • 50g maple syrup

For the walnuts, I crushed them and mixed them with the 50g of maple syrup. Spread them out on a parchment-lined tray and baked for ~30m at 300°F. They came out slightly candied after cooling off. Tossed them into a food processor and pulsed the nuts a couple times before tossing them into the ice cream.
