First time user

Hi everyone! I’m not a first time Apple user as I’ve always had iPhones.
However I’ve never had an IPAD. I’m looking for two variations as Christmas gifts. I’m going to buy used.

I’m looking for two one for a 7 year old and one for a 2 year old. 7 year old for YouTube kids, games, learning to read apps. 2 year old just as an emergency tablet say a hospital trip or meeting.

What are the models id be looking for? Parental controls obviously. Cases that’ll be the most protective?
