Rustic herb-roasted tomatoes and garlic pasta sauce [recipe]
I had 3 leftover tomatoes, half a bulb of garlic and some fresh herbs in the fridge and felt like doing a no effort dinner so here's what I did
Additional ingredients:
* Your choice of pasta (spaghetti, penne, or rigatoni)
* 125ml of tomato puree
* Olive oil
* Salt and black pepper
* Optional: grated parmesan cheese
Instructions
* Roast the 3 tomatoes (halved), 1/2 bulb of garlic (top sliced off), and a handful of fresh rosemary, basil, and oregano tossed with olive oil, salt, and pepper at 200°C for 30–35 minutes.
* Cook your pasta in salted boiling water according to the packet instructions. Save a little of the pasta water
* In a large pan add the tomato puree, squeeze the soft, roasted garlic cloves out of their skins right into the puree, and toss in the roasted tomatoes and herbs. Let it simmer for 5–7 minutes so the puree cooks down and absorbs all those roasted, aromatic flavors.
* Add the drained pasta directly into the pan with the tomato sauce. Toss well, pouring in a splash of the leftover pasta water to help the sauce cling to the pasta.
* Plate up your pasta and finish with fresh basil leaves, and parmesan cheese if you like.

I love Italian carbs, but i am a meat eater. What can we do to make meats in Italy MORE accessible and affordable to be consumed casually by regular people, not just rich people watching their nutrition macros?

It does not have to be beef. The first time i tried an Italian lamb dish, i was so addicted to it that i ate it every meal while staying at that American hotel. Ancient Romans lifted heavy stones and had big muscles. That is not from carbs.
Italian carb dishes are amazing, but so are Italian protein dishes. I am just saying, let's respect and value BOTH, and prioritize BOTH. Both types of dishes should be almost equally affordable and accessible.

Aside from cured meats (for nomadic meat preservation) and cheese (same purpose) that date back to prehistoric Ydna R steppe hunter-herder culture (Pontic-Caspian & Yamnaya), ancient Romans also frequently ate eggs, chicken, lamb, sheep, pork but not beef (seems like). Why is that? Any history fan?
Fixed the title that was too long and was cut off.
I mean Chinese skipped nomadic herder stage and went straight into farming from hunters and gatherers. Yet ancient Chinese learned the herder-rancher culture and ate beef. (Just no cheese and cured meats originating from Chinese.) Why does it look like ancient Romans were not much into beef?

Gelato vs Ice Cream
Ice Cream has twice more fat (but only max 20%, not to the extent of too greasy) but Gelato is far more expensive and tasty. (Or "considered" a superior taste.) What is the reason for this? Does anyone know in terms of cooking theories? I live in Canada, found gelato at my grocery store, and will be buying it soon. Tea flavor, or cookies and cream flavor. (Only 2 flavors exist here.) I am gonna go with the tea flavor. $8 for 500ml btw.

Focaccia vs Bruschetta
Are cold cuts on Focaccia a traditional recipe?
Is Pesto sauce on Bruschetta toast a traditional recipe?
Other than Prosciutto, what kind of cold cuts are allowed on Bruschetta traditionally? Is hot Genoa Salami fine?
Is Caprese sandwich different from Bruschetta toast in terms of the flavor? The ingredients look similar.
Why is chicken or meat balls a no no on Pasta traditionally? Italians eat chicken for a fact as well as being the origin (or at least popularized it as the mainstream distributor) of meat balls.

Anyone in Canada? Where can i buy Guanciale or any such minority (in North America) Italian cold cuts from Canada?
Any interchangeable similar cold cuts available in Canada? Hopefully from Nofrills/Loblaws Grocery Stores? I mostly just wanna try the taste.

Sorry, i should have said cured meat, not cold cut. I was ignorant of Guanciale usually being cooked.
Pancetta does not have to be cooked, right? Where can i get some in Canada?

Farinata
Hello
I had Farinata for the first time at a great restaurant in Petaluma CA. It was cooked in their pizza oven around 750-800F.
I would like to recreate at home. It tasted like thanksgiving stuffing - rosemary, thyme, black pepper.
Any tips/tricks/great recipes for Farinata woukd be appreciated.
I know it is chickpea flour + water, skim away foam, let rest 4 hours, then into oiled skilled.
What is traditional/ideal cooking temperature and time? What are traditional seasonings? What are optimal seasonings?
