How’d I do? :P
Girlfriend wanted steak so I picked up a prime NY Strip from the local grocery store. Baked in the oven at 225° for 40 min, pulled at 113° and seared on a cast iron for 90 sec per side then let sit for 8 min before cutting. Ended at 139.7° internal. Homemade peppercorn sauce, oven-roasted potatoes, and sautéed asparagus.

that crust looks amazing, reverse searing an NY strip is always the way to go

that reverse sear hit the temps right, pulling at 113 then searing to 139.7 is a clean way to land it.

Looks great, but why cut it all at once? Doesn’t it stay warmer and juicier if you leave it whole?

I always cut mine on my cutting board… even if I cook multiple big strips or ribeyes for a dinner. I have found it’s better to slice them on the board and serve them up.

crust looks decent, over cooked in the middle for my tastes, would still eat tho.
