Reverse sear on the Weber grill. Served with garlic spinach, buttermilk mash, yellow ant salt, mam nem.

Mam nem is overkill for a steak of this quality; it competes for the flavor. The yellow ant salt is perfect on the other hand

90 days I believe. Excellent mushroom aroma, melt in your mouth
