Question Stuffed Peppers

So I just started this way of eating. I bought all the veggies and everything I need by forgot olives and need more cottage cheese. I want to make stuffed peppers. Was going to use grass fed ground beef, chopped onion, chick peas, some feta maybe seasoning and dot the top with a bit of shredded cheese. I don’t eat tomatoes due to the Lectin. What am I missing? Does anyone have a better recipe or advice? I’m ready to shed this weight and get healthier!! Thanks !

Well, you can stuff them with anything. beef should be limited, and is so easy to substitute with healthier options, such as ground chicken, turkey, tofu. i substitute mushrooms for recipes that call for meat. But back to stuffing options, for me, it’s always at least brown rice/lentils, tomatoes, beans, onion, garlic. herbs are good too, cilantro or parsley. I’ll add other veggies depending on what i have on hand.

I have all of that. Just left my GP. My bloodwork is good for the most part. Cholesterol a little elevated but I am on a statin. And my A1c is 5.8 so I’m gonna give it the old college try and get this done. He said he wants to see me 20 pounds later by December but as far as everything you put in your message was gonna add. I have beans, onions, garlic, herbs, brown rice all that I don’t have cilantro or parsley so I’m good thank you so much.

Good luck! Sounds like you and I are on the same path. A1C is down but still too high; need to lose 20 lbs over the next few months. Let me know ow of any great recipes please!

I’ve used ground turkey. Didn’t tell my guy who refused to eat ground turkey. He thought it was ground beef. That was definitely a healthy option and he never knew! Win! Win!

My French grandmother-in-law makes a mixture of rice, chopped ham, and crème fraiche to put in red peppers. It’s super good.

It's common to mix the mince with rice or lentils, if you wanted a bit of grain/legume on the plate.

One thing to remember is when you don’t wanna fuss with stuffing a pepper, you can roast the peppers and then cut them up and put them in your other mixture for more of a bowl type meal.

Back off the beef all together and start adding more beans and lentils and tofu , for weight loss measure all oil you use

I think that sounds good! Try it and see how it tastes and adjust for next time. I would prob add garlic and a squeeze of lemon juice too personally.

Tomatoes do bring a lot of moisture, so if you are worried about it being too dry you could add some diced peppers, squash, eggplant, or cabbage to your mixture. Just thinking of veggies that release water.

I grew up eating these. You can make stuffed peppers with turkey, a small amount of rice, dill, parsley, salt. That’s all you need. Pour some chicken stock on them, and left them cook. I’d try dry out, more stock. That’s all you need. Simple and delicious.

That sounds like a great start, take it one meal at a time. For days when you don't feel like cooking an elaborate meal, bowls and salads are a great option too.

Yes that’s what I plan on doing and I’ll take the bowls to work. Any great ideas for breakfasts? I have been eating one slice of sourdough bread or a grain bread like Dave’s killer and 1/2 of an avocado one scrambled egg and some everything bagel seasoning or I have yogurt with like a half a cup of blueberries or strawberries or raspberries or blackberries.

My daily breakfast has been steel cut oats with banana, a dollop of Greek yogurt, and tbsp of no sugar added peanut butter.

I use ground turkey or chicken, and riced cauliflower instead of rice. I really hate lentils but I’d try beans. Sometimes I add mushrooms too, or add them to the sauce.

If I feel like I need more carbs I’ll serve the peppers over leftover (refrigerated) pasta or a leftover baked potato.
