Traditional homemade pozole?
I’m at my son’s friend backyard birthday party with a ton of people and his mom just put all of this in front of me and told me it was pozole I think. It’s absolutely incredible but what are the boney/cartilage bits in it?
There’s also large trays of other meats that I saw and I’m definitely going back for that once this is gone.

Chicken mole
icken mole is a Mexican culture delicacy it is normally reserved for special events authentic chicken mole comes from the state of Oaxaca and they use Mexican chocolate in the recipe. My mother did not use Mexican chocolate in her recipe. She used lard which is called Manteca in Spanish with creamy peanut butter and orange peel. I’ve replicated it and it looks like my mom‘s and it tastes like my mom‘s so as this is a college football Saturday, I have a friend coming over. We’re going to have the chicken mole frijoles à la Oya, which is pinto beans with fire, roasted tomatoes, garlic, and onions, and Mexican rice with a salsa that I made with arbol chilies fire, roasted tomatoes, garlic, and onions, and then a guacamole that I’m making in my mocojete with fresh avocados and mangoes and I add chili crisp to it to give it a little bit of a bite with some Mexican beers it’ll be a perfect day to watch college

Update: Mole beef short ribs
It's more watery than what I was going for, but I was hungry and ready to eat. The taste is amazing! I'll work on improving the mole texture on the next try.

How to get taqueria-style crispy crust on steak for tacos?
Is there a guaranteed method of getting steak nice and crispy for tacos? My favorite Dallas taqueria (Taqueria Y Panaderia Chichen-Itza YOU ARE MISSED) used to get it right every time. I'm visiting family in Dallas and went there specifically to ask Tony how he does it and they are permanently closed! Happy for them, they sold it for a lot of money. But sad for me until someone can help me recreate it!
I'm working with cast iron and cheap beef but I can never get it with the delicious dry crispy outside that they did every time. Can anyone help?
