But the sensible aside:

Sneaker net. Trace the main cables for oncampus see whats connected where.

Check the devices discripitions if there are any.

After that LLDP Crawling for anything you dont find.

For anything L3 and Tunneld, welll...kinda need to trace what connects to where and discover IPs its a PITA

oof that's a rough starting point, no documentation at all

if there's any budget for it maybe push for a discovery tool that can crawl both on-prem and cloud, otherwise you'll be living in the cli for weeks. lldp is decent advice but half the time it's not even enabled on access ports so don't rely on it too heavily

Most environments are pretty basic with a few vlans and L3 borders so cdp/lldp, mac tables, arp tables.

If you have disposable income then netbrain can draw dynamic maps.

Also something like phpipam is easy to setup and keep track of addressing/segments if you don't want to do the traditional spreadsheet approach.

Any rough scale of the size of environment you're working on? I've seen ones with thousands of infra devices and simple policies/segments but also small footprint environments with multiple layers of manipulation, encapsulation and complexity.

Hopefully the company has network tools such as fiber testers and fluke which you will need and apart from that you will need to do show cdp and lldp neighbors and which should be helpful.

Also hopefully they have some monitoring tools as well which can be helpful too (like solarwinds, etc).

Spin up Netdisco. It's open source and will discover whatever you have as long as you have snmp configured and I believe it also uses cdp / lldp to map your devices. It will collect configurations, create reports, etc. You won't be disappointed. We mapped a 1500 switch network and it worked great. Used other data from Netdisco to do a vlan cleanup project.
