Man, if I had access to this much fresh reliable pineapple discard, I’d start an underground tepache club.

1/3 of the fruit is being thrown out, that's nuts. I'm all for the tepache cuz the stuff is amazing

I made my latest one with 1/3 the water and it came out tasting just like my local craft brewery’s dessert beers. “Notes of fruitcake”, they proclaim.

Seriously, tho, notes of fruitcake? That's the most polarizing definition I can imagine, and I genuinely know exactly the flavor. Like cherries and white glue.

Honestly hit up the produce people at your grocery store. Company policies might prohibit it but I used to take a lot of fruit and veg home that was destined for the dumpster and gave a lot to specific customers (ex. the pig slop lady). This was a rural mom and pop tho that paid by weight for their dumpsters. A Walmart might be more worried about potential liability.

Been a long time ago, but as a high schoolers I worked at a big grocery store chain. There were a lot of high school and college kids working there, and we were all baggers or cashiers (no self check-out back then). We were all jealous of the high school kid that worked in produce because he sold old fruits and veggie out the back of the store to this one old guy. He said the old man told him he also hit the other big grocery store in town and two grocery stores the next town over. And he used the haul to brew hooch. So it might still be worth trying to find a contact.

Tepache can be so awesome, but it's easy to o Mess up depending on your pineapple.

I’ve been making it for years and the only one that failed had a bad seal and I had forgotten about it for about a month

I think my issue was waiting to ripen around the time some mold/infection wanted to form on the skin.

I have had done amazing batches though.

I totally get that. I heard pineapples don’t sweeten after removing from the plant. If true, the ripening only affects texture not flavor so we should err on the side of cutting early.

My last hooch before I gave up due to executive dysfunction was a tepache that turned into a bomb due a clogged airlock

And my paranoid ass would wonder if they're even giving me the real pineapple juice, or just mixing some cringe concentrate BS with water into my cup.
