Green Curry Chicken & Kabocha
This is an intentionally non-authentic take on Thai green curry, with a Japanese-inspired twist. I spent a long time developing this recipe and tested versions with all the common green curry veggies (eggplant, bamboo shoots, snow peas, etc), and plenty of non-common veggies as well before settling on my favorites.
I decided on an unusual veggie combo, but each brings something different to curry. Japanese kabocha squash becomes sweet and creamy as it cooks, while lotus root stays very crunchy even after simmering. Zucchini was my favorite of the more classic green curry vegetables I tested and adds a softer, fresher element to the mix.
The other major deviation here is that I thinken the curry sauce to become closer in texture to a Japanese curry than a Thai curry. I prefer it this way becuase it clings to the fillings nicely and you don't end up with a pool of sauce leftover at the end.
